Food Sunday: Garlic and Lemon Chicken
I found this recipe through a Facebook “share.” It showed up from a woman named Leanne Cook’s Facebook page. The recipe also includes links to a Facebook page, The New U and a web site, Real Simple. This looks to be the original recipe from Real Simple but it varies a small amount from what I first saw. Please note, the picture is NOT of this specific recipe.
The basic recipe calls for:
4 boneless/skinless chicken breasts
8 small red potatoes (quartered)
3/4 pound cut green beans
6 Tablespoons olive oil
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Pour one Tablespoon olive oil in a large baking dish or skillet and rub all over, greasing thoroughly. Slice one lemon thinly to line the bottom of the dish. Pour the rest of the olive oil, minced garlic, salt, pepper, and the juice of the second lemon in a bowl and mix together. Add the chicken breasts, potatoes, and green beans and mix all together until everything is well coated. Place dish in oven pre-heated to 400 degrees and bake for 50 minutes or until cooked thoroughly.
I have made this dish a couple of times now. The first time, I did not have anything but garlic powder so followed the measure as the garlic powder gave for the equivalence of four cloves. The second time I made it, I used six chicken breasts. I have just used a can of green beans but do intend to try the dish with fresh green beans. I have not actually measured the specific amounts of potatoes, salt, pepper, or olive oil as I just add what seems to be a good amount that is roughly what the recipe calls for.
I also think this might be a good recipe with some fish filets although I would most likely coat the fish with the oil/lemon/garlic/pepper mix then set aside and add to the vegetables after they have baked for 40 to 45 minutes to avoid over cooking.
