Sunday Food: Whole Wheat Chocolate Chip Muffins

They always look like you went to a lot of trouble, but muffins are quick and easy.   I confess, I used to whip them up regularly for a hot breakfast when my kids were little.   Keep the ingredients on hand, and they’re actually convenience food for the hyperactive little ones.

These whole wheat muffins have an extra attraction, and that chocolate is a good energy producer.


    2 cups Whole Wheat Flour
    1/2 cup white sugar
    1 Tbsp Brown Sugar
    1 Tbsp Baking Powder
    1/2 tsp Salt
    1/2 cup Flaxseed
    1 large Egg
    1 1/4 cups Skim Milk
    1/3 cup unsweetened applesauce
    1 cup Hershey’s Semi-Sweet Chocolate Chips
Makes 12 regular-sized muffins.
Preheat oven to 400.
Mix all dry ingredients together.
Beat in egg, milk, vanilla, and applesauce.
Fold in flaxseed and chips.

Bake for 15-25 minutes, or until toothpick is clean. Let cool. ENJOY!
