Food Sunday: Cranberry Sherbet & Quick Fruit Salad for Summer

Hmmm. I’m beginning to run out of recipes that I’ve gotten and used from my folks. I only kept the recipes that I thought I might actually make so gave away a lot of index cards full that my mom had. As you can see, not all ‘recipes’ require firing up the oven or stove.

Cranberry Sherbet

Cranberry Sherbet

These are a couple of easy things to make and with summer coming up, might make nice side dishes or an after dinner light snack

First up is a Cranberry Sherbet:
3 cans of cranberry jelly
1 large can of frozen orange juice
1 quart bottle ginger ale.

Combine the cranberry jelly and frozen orange juice with a mixer until mixed well. Add in the ginger ale and mix then place it in freezer. After it starts to freeze, take it out, mix it some more then re-freeze. Serve.

Quick Fruit Salad.

This one is really hard to mess up but is actually quite good. (My aunt “made” this for us after my father died)
1 can pie cherries drained
1 can pineapple chunks drained
2 cans mandarin oranges drained
handful of pecans
1 banana sliced

Mix all ingredients together in bowl. Serve
